Garlic Broccoli – from Nyara – Maxwell Elementary 5th Grade

Niyara - Broccoli Badge for Ambassadors

2 cloves garlic

3/4 teaspoon salt

1/2 bunch broccoli, cut into florets (little bite-sized pieces of the tops and sliced stems)

2 Tablespoons and 2 teaspoons olive oil

2 Tablespoons red wine vinegar

1 1/2 teaspoons Dijon mustard

1/4 cup grated Parmesan cheese, or to taste.

1.  Smoosh or crush the peeled garlic, then sprinkle the mashed garlic with the salt.  Smoosh or crush it some more until it’s like a paste.

2.  Put the smashed in a bowl with the olive oil, vinegar and mustard, then stir them all together.

3.  Add the sliced broccoli and stir it all together.

4.  Chill for 3 hours to marinate the broccoli.

5.  Sprinkle with Parmesan cheese and serve.
